Pork belly

Coming from the long underside of the pig, this cut can be slow-roasted as a slab, rolled, tied and stuffed, or cut into chunks and used in pies and stews. If you want to leave it whole to enjoy a huge piece of crispy crackling, make sure you score the skin well and ensure it's really dry - this should result in a brilliant crunch to contrast with beautiful soft meat.

Boneless pork shoulder

This boneless roasting joint is taken from the front shoulder of the pig. This is a well-marbled cut that can be roasted, pot-roasted whole or cut up for stews. Whether it is roasted or braised, this cut becomes meltingly tender and deliciously flavoursome.

Leg of pork

A large joint from the hindquarters, most of which is used for ham. If cut into more manageable-size joints, can be roasted whole or rolled with the bone removed and stuffed with a variety of ingredients before tying. Produces good even lean slices when carved and also makes good crackling.

Bone in pork shoulder

From the upper part of the shoulder near the loin area and often called the blade. This is a well-marbled cut that can be roasted, pot-roasted whole or cut up for stews. Whether it is roasted or braised, this cut becomes meltingly tender and deliciously flavoursome.

Pork chops

These are cut vertically off the spine and ribs then trimmed. They are very juicy and flavoursome. Best grilled but can be oven cooked although this tends to dry them out.

Pork tenderloin

Taken from inside the rib cage at the bottom end of the loin. Although not a great quantity from a pig, this is the most tender cut as it is very lean and contains hardly any connective tissue.

Rolled loin of pork

Cut from the bottom part of the vertebrae and can be tied and oven-roasted. This joint is very uniform in shape and is very tender.
